Both your incoming and outgoing mail servers are just

mail.domain.com

Where domain.com  is replaced by your domain you host with us.

I agree with the webmail/email client username confusion.

I was getting "incorrect login/password" errors when setting up my email client. One thing that may be confusing is that there are two different login names to check your email. If you are using your webmail.example.com then your login name is joeblow, but if you are using an email client (Outlook, Mozilla Mail, Eudora, etc) then your login name will something like m2947682

IMAP over SSL seems to be enabled on the dreamhost mail servers. Dreamhost Rocks!
